Cheddar at 50 lb press

Trying cheddar again.

I wasn’t real sure about the curds. I had a hard time holding at 102 F and they were softer than the last batch (failed because I forgot salt).

I nearly forgot the salt again! Can you believe it? Jeez Louise. I was loading the mold when my brain kicked in with ‘huh, something not right here… Read the instructions. Salt!’ Ruined cheddar averted.

So I am on my 24 hours with 50 lbs. The follower (can of green chilis) is 2 lbs, the top press board is 8 lbs, plus 18 lbs of dog food, 18 lbs H2O and a 3 lb can containing a whole chicken we bought at 3 Bears because it was novel and haven’t had the nerve to eat. That’s close enough to 50 lbs.

Looks cool, I think.

Box and cheese

She is playing the toddlers version of 101 things to do with a box.

Plus I made a one gallon batch of cheddar on Monday from Havemeister Dairy. Best curds yet. Regrettably I forgot to add the salt before loading the press and didn’t remember until far far too late to fix. No salt means no aging as it will be too acidified and bad gross things will happen instead of good delicious things.

So we eat the cheese fresh and try again.
Here is the cheese in press shortly before I remembered I should have added salt. The extra cans are too keep the 40 lbs on top from toppling if the cheese settles unevenly. The garbage bags are to contain the 10 lbs of flour and 3 gallons of water in case it managed to topple anyway.

Red Chair happiness

Our friends opened a new restaurant.
Red Chair Cafe

I had today off and no responsibilities this morning, and I needed coffee.

A pattern of clouds picked up the pink, orange and red hues of the sun reflecting off the mountains. One of the best things about January in Alaska is the shorter days mean a sunrise even the lazy get to appreciate. A few grey clouds edged the pinks. Beautiful. I paused outside the Red Chair to take a photo.

As I approached the door a couple exiting brought with them a savory smoky yummy smell with an overtone of strong black caffeine. Mmmm, coffee.

I was seated quickly and had a cup of coffee in my hands even faster. Heavy white mug on a saucer with a doily to dress it up, and a metal pitcher of cream for doctoring. Smelled and tasted wonderful. Fresh, hot, perfect.

The chairs, unlike many at restaurants in our town, were padded and comfortable. I can imagine burning a lot of hours in these, drinking coffee, visiting and enjoying the promise of a tasty meal. I liked the steam punk decor. I admired the concrete and wood floors – I’d heard stories about how hard David had worked on them. I admire hard work. Bare bulbs with old fashioned filament bulbs dangling and wrapped around pipe work. The fanciful and edgy blimp that decorated the wall near me was very clever. I thought it was cool that the artist incorporated the pipe that would have otherwise bisected the blimp into the art by painting it too.

My Kale bake (veggie option – I chose tofu over eggs as I have been eating a zillion eggs from our own hens recently) arrived with the warning that the cast iron handle was extremely hot.

I paused to appreciate the rich fragrances. Mustard, tomato, mushroomy cheesey-goodness smells wrapped around my nose and set me salivating. Oh my, I was going to enjoy this!

Kale is delicious. This kale was exquisite. Tender with just the right resistance to bite. Generous tomato and onion and asparagus and a healthy but not obtrusive amount of soft tofu. My mouth felt satisfied like I was enjoying a sausage enhanced by the amazing crunch of veggie joy.

I am no wordsmith and my breakfast is getting cold while I abuse the English language looking for adjectives to describe how wonderful my breakfast tastes and how much I am enjoying it.

Making Jo’s Ancient Orange Mead

I stumbled across a recipe for Jo’s Ancient Orange Mead last November and have really wanted to give it a crack. Super easy and maybe $8 in honey.

Gallon of water
2-3 lbs honey
1 clove
1cinnamon stick
25 raisins
1 orange in 1/8’s
Shake the bejesus out if it to mix and aerate.
Add 1 tsp bread yeast. Give it a swirl to mix and cap with your stop cock thingy.

Wait 2-12 months (opinions vary).

Winter fun

We stopped by the Ice festival downtown on Sunday. Some good friends had entered so we went to cheer them on. We saw lovely creative carvings made by talented hard working people.

There were ‘teacups’ that would spin! Elizabeth and I took a seat and Scott sent us whirling about. It was fun (and cold on my rear). It was a little too far past nap time for Elizabeth to enjoy herself but she put up with our foolishness.
