Box and cheese

Plus I made a one gallon batch of cheddar on Monday from Havemeister Dairy. Best curds yet. Regrettably I forgot to add the salt before loading the press and didn’t remember until far far too late to fix. No salt means no aging as it will be too acidified and bad gross things will happen instead of good delicious things.

So we eat the cheese fresh and try again.
Here is the cheese in press shortly before I remembered I should have added salt. The extra cans are too keep the 40 lbs on top from toppling if the cheese settles unevenly. The garbage bags are to contain the 10 lbs of flour and 3 gallons of water in case it managed to topple anyway.
